1/2 Sweet to Sweet Red Wines

Rd3:  Wines with lots of sweetness

Synonyms: Naturally sweet, Fortified wines

This category of wines more or less rich in sugar. Their sweetness is obtained with blocking the alcoholic fermentation to retain the natural sugars. In some cases, a grape brandy is added to the newly forming wine of grape juice in a process called ‘Fortification”  [i.e. Ports, Banyuls, Pedro Ximenez …]

Harmony: Melon, foie gras, dried fruit baskets and deserts, chocolate desserts (although difficult, they can also be wonderful) blue cheeses [Roquefort, Stilton …]

Temperature: 55 – 60°F / 13 – 16°C
