Used mostly in Pomerol and Saint-Emilion, this grape is less tannic than the Cabernet Franc and the Cabernet Sauvignon. It has little acidity, a somber nose and makes wines that are more supple in their youth giving tertiary aromas (animal, truffles,…); precocious.
